Ideal for a posh dinner party recipe book and if you fancy a theme - make it chocolate.
Try this for a main course receipe:
Crab Rissotto (or vegetarian substitute)

650ml quality stock
1/2 small onion
1 clove crushed garlic
2 tablespoons quality Olive oil
175 gr risotto rice
1 tbsp brandy
150 grm white crab meat (or quorn chunks)
Sea salt and freshly ground black pepper
1/2 bar of Divine White Cholcolate finely chopped
2 tbsp Parsley finely chopped.

Sweat onion and garlic in a large sauce pan in the Olive oil until soft.  Add the rice and stir.  Add brandy and stir until almost evaporated.   Add 1/3 of hot stock and stir thoroughly  over a medium heat.  Keep stirring and adding more stock until it has been absobed - should take around 20mins.  Add the crab (or substitute) when the rice is al dente soft but still firm then when the rice is soft remove from the heat.  Season to taster add parsley and white chocolate and serve immediatley.
